Prosecco Grappa. The fresh grape skins, as soon as they arrive in the distillery, are deprived of the pips and the pedicel, to eliminate any woody vegetable substance. This innovative treatment allows the grape skin to be distilled with a consequent improvement in the organoleptic properties of the distillate. After the separation of the woody parts, the grape skin is preserved by the GrappaSystem method which provides for the storage of food plastic in tunnels in a modified atmosphere with PH correction and the addition of yeasts to start a controlled alcoholic fermentation. CASTA is obtained through a continuous column distillation method. The careful distillation allows to select only the purest, fruity and floral aromas of the grapes, and obtain a distillate from pure grapes, elegant and versatile, with only 160 mg / liter of aromatic substances different from ethyl alcohol against 350 mg / average liter of traditional grappa.
