NAME

Franciacorta Riserva.

GRAPE VARIETIES

Chardonnay 55%, Pinot Bianco 25%, Pinot Nero 20%.

VINEYARDS OF ORIGIN

12 vineyards in Chardonnay, with an average age of 31 years, located in the municipalities of Erbusco, Adro, Corte Franca, Iseo and Passirano.

2 Pinot Bianco vineyards, with an average age of 26 years, located in the Municipality of Passirano.

4 vineyards in Pinot Noir, with an average age of 32 years, located in the municipalities of Erbusco, Iseo and Passirano.

HARVEST PERIOD

First ten days of September 2011.

AVERAGE YIELD PER HECTARE

7,600 kilograms of grapes, equivalent to 2,960 liters of wine (yield in wine: 39%).

THE VINIFICATION

Annamaria Clementi is the result of the search for excellence, both in the vineyard and in the cellar. In compliance with the Ca 'del Bosco method, the grapes, harvested by hand in small boxes, are promptly coded and cooled in cold rooms.

Each bunch is selected by expert eyes and hands, to then benefit from our exclusive "bunch spa". A particular bunch washing and whirlpool system, through three soaking tanks and a system for complete drying. The base wines are obtained exclusively from first pressing musts. Alcoholic fermentation takes place exclusively in small oak barrels, made with selected woods and aged for at least 3 years. Here it remains on its lees for another 6 months, also carrying out malolactic fermentation. No compromise, no concession: only the wine from the best barrels, from the 18 base wines of origin, is tapped to give birth to Annamaria Clementi. A pair of flying tanks transfers it by gravity, from the barrels to the assembly tank. A very long aging in contact with the yeasts, which lasts for more than 8 years, determines its unique profile.

An absolute Franciacorta. The dégorgement takes place in the absence of oxygen, using a system unique in the world, conceived and patented by Ca 'del Bosco. This avoids oxidative shocks and further additions of sulphites. It makes our Franciacorta purer, more pleasant and longer lasting. Finally, each packaged bottle is uniquely marked, to ensure traceability.
