The Single Pot Still Irish Whiskey comprises whiskey pot stills aged between 7 and 10 years. The whiskey is aged in new oak barrels and partly in ex Bourbon and ex Sherry barrels. On the nose fresh aromatic oils and spices with fruit from the orchard and barley on a toasted wood background. On the palate Full spicy body. A hint of cloves together with the fruity sweetness of green apples, complemented by a toasted oak. Persistent flavors of spices and barley follow.

Description

Pot Still Irish whiskey is a unique style of whiskey in Ireland. The guidelines require whiskey to be made with at least 30% malted barley and at least 30% unmalted barley, with up to 5% other unmalted grains (e.g. rye, oats) as needed. It must be discontinuously distilled in copper stills, aged for at least 3 years in wooden barrels and bottled at no less than 40% vol. All of this must take place on the island of Ireland.
