GRAPES: Chardonnay – Vermentino.
VINIFICATION: We pick ripe grapes between the end of August and the first week of September, and immediately chill them at 5-6° (about 43 Fahrenheit) and press them.
We whiten the must by cold settling and let it slowly ferment at controlled temperature for 15-18 days. Juices are finally blended and refined in bottle.
