RUM / RON From the Distillerie de Port-au-Prince, in the heart of the capital of Haiti, comes the first Providence aged. The Cristalline sugar cane used for Providence rums comes from Michel Sajous, in Saint-Michel-de-l'Attalaye, 150 kilometers to the north. Fermentation takes place with natural yeasts, allowing the development of an aromatic complexity. The liquid obtained after fermentation is distilled in a bain-marie in a discontinuous copper still, built by Müller in collaboration with Vittorio Capovilla. This Providence includes the first aged barrels, numbers 3 to 27, all ex-Caroni. Alcohol content 52%

RUM / RON An old rum from a legendary and now closed distillery in Trinidad, only slightly tamed by a 70 month finish in ex-whisky casks matured in sherry. The tannic intensity is enriched by a further level of richness, but remains extreme. On the nose we find powerful esters, bergamot, cola, but also the aromatic notes of anise and liquorice, and obviously the inevitable dark and deeply woody character. The influence of the finish is more evident on the palate: it starts succulent, rich, almost velvety, with a character of sultanas and orange marmalade. It begins to grow relentlessly towards the typical notes of liquorice root and gentian, black coffee and cloves, and towards a very warm and tannic finish. Enormously complex and with a long evolution in the glass. Gradation 59%

Puerto de Indias Blackberry is the result of a traditional process focused on obtaining a gin in which the essence of blackberries and a careful selection of ingredients come together to complete and give shape to this unique product. The fruity note of blackberry dominates the nose, underlined by delicate hints of purple caramel on a fresh and citrus base. In the mouth after a fine and velvety entry, the complex notes of wild black fruits make their way with their soft, intense, sweet and sour nuances, culminating with the very light characteristic touch of cinnamon, with a soft, fresh and dry finish at the same time.
