Pigs Nose is an exceptionally fine five year old blended whiskey created by Richard Patterson, Scotland's only third generation master blender. The blend contains a high percentage (40%) of malt whiskey, mainly from Speyside, which give the product their characteristic softness; the name derives from the peasant expression "as soft as a pig's nose". An exciting new version resulting from our long experience with aging. This bottling is a set of five barrels with a filling bourbon finish and two in virgin American oak. The result is the perfect balance between the salty, dry and mineral taste of Caol Ila's classic whiskey and the contribution of virgin oak, which adds a backbone of creamy, buttery, robust sweetness: it is rich, fuller and bolder than usual. , with notes of vanilla and soft tannins that are expected from this type of barrels. The secret lies in balance, as the lighter barrels of bourbon still provide a classic and lively counterpart with their intensely smoky and sharp sea notes. This is still Islay ... but with a sweeter new twist. Gradation 46%
WHISKEY WILSON & MORGAN HADDOCK 2007-20 "SHERRY FINISH - LIGHT PEAT" CL.70 WITH CASE
€48.50

Out-of-Stock
Assembled from our secret recipe with malts from different regions of Scotland, aged in sherry casks and then with the final addition of a generous amount of peaty Islay whiskey finished in an Oloroso hogshead, to give it a moderate smokiness. The contribution of so many single malts results in a multifaceted complexity. The nose is honeyed, slightly vinous and with a touch of ripe fruit, but also with notes of farm, camphor and obviously a notable but delicate smoky presence. The peat smoke and its tarry, phenolic and medicinal character are in fact much more intense on the palate, where they find their right place next to the vinous hazelnut, earthy and leathery notes, bitter oranges and hints of licorice. WHISKEY WILSON & MORGAN BEN NEVIS 2013-20 "SHERRY WOOD" CL.70 WITH CASE

The whiskey from the only distillery in the coastal town of Fort William, with a view of the highest Scottish mountain from which it takes its name, is always highly sought after. Its malty character, medium body and fresh orange notes are quite unmistakable and have been the basis of some historical blends. But this version is much more extreme in style and all the more valuable for it. The influence of the first Oloroso sherry cask filling produced a very dry whiskey, with marked vinous notes and an intense aroma of sour red fruits (berries, cherries, but also peaches). On the palate the dry character of the sherry dominates: fruity fragrant, but very spicy and warm, sharp as a blade. Gradation 46%
WHISKEY WILSON & MORGAN BUNNAHABHAIN 2014-20 "HEAVY PEAT" CL.70 WITH CASE
€43.50

Out-of-Stock
A rare version of an ultra-peaty batch from Bunnahabhain, an Islay distillery famous for its usually unrepeatable single malt. What makes this bottling so special is that when they make a peaty spirit, they don't go for half measures. Extremely smoky, ashy, full of maritime notes and a marked medicinal touch, it is a very clean and malty spirit as expected from Bunnahabhain ... but at the same time it packs a touch in terms of pure "peat power". It is also vegetable and herbaceous, with rich notes of black licorice, gentian root. The aftertaste is particularly warm, peppery and persistent, with the smoke reverberating for minutes after each sip. Gradation 48%
WHISKY WILSON & MORGAN HOUSE MALT SINGLE ISLAY MALT 2015-19 CL.70

Young but already fully mature, this peated Islay whiskey from a secret distillery continues the tradition of our mysterious House Malt. This version is one of the most robust of all, with a heavy and almost thick body and an extremely tarry, ashen and smoky character. As usual, fresh vegetal notes of green bananas, seaweed and licorice root create a lively contrast to the smokiness and creamy sweetness of the malt, and a lightly toasted note of salty peanuts adds to the intriguing profile. Our house malt always works the miracle of finding the perfect balance between heavy peat smoke and good drinkability. Juicy and robust, but never cloying or aggressive. Gradation 43%
