This Old Tom Gin pays homage to what we think gin would have been like before its transformation took place. We take a potted distilled wheat spirit and redistill it with juniper, coriander seeds and licorice root, before adding some sugar and then aging in a very old sherry barrel. It perfectly balances the juniper punch with the persistent sweetness of the barrel aging process. Gradation 47.4%
