Description

Aroma: Being an aged Dominican rum, the aromas of sugar cane juice and vanilla stand out, produced by aging at the source, perfectly combined with hints of smoke, peat and malt and nuances of dried fruit from the final aging in single malt barrels .

Taste: In the mouth it is robust, long and persistent, with an elongated flavor that provides smoky touches that give it a very special character.

Sensation of swallowing: Deep body with an aromatic complexity that fills the palate with a perfect harmony between aged notes and smoky nuances.

What is peat?

Peat is worth thousands of years of decaying vegetation. When the peat is harvested, it is cut into small sod slices, stacked in pyramids and left to dry. The substance is in the smoke. The barley grain is exposed to the smoke of a peat fire to stop its germination; a crucial part of whiskey production. Once dried, the malt is crushed and turbidity will be measured in PPM or phenolic parts per million.

What does peat taste like?

Peat varies by region and can add tasting notes that include anything from soapy, rich, smoky, herbal, creamy, salty, citrus, nut, etc. Depending on the amount of time the malt is peated.
