Located on the slopes of the rolling south of Mauritius, the fields of Saint Aubin have been cultivated with sugar cane since 1819. Later on the estate were planted, plantations of Vanilla, and it was built the distillery to produce Rum. Saint-Aubin produces the only Rum of Mauritius-agricultural, that are distilled directly from the juice of fresh sugar cane. The estate takes its name from one of its first owners, Pierre de Saint Aubin. The sugar cane is harvested manually and then sent to a mill where it will be lentamenmente and gently pressed to extract the juice. Only this precious juice before baked, commonly called "Fangourin" in Mauritius, it will be fermented and then distilled in a copper pot still, a traditional. It is preserved only the heart of distillation to create these rums. For the elongation, it is used spring water, from the plantation of Bois Chéri, pure water with a low mineral component. A microclimate highly favourable to the cultivation of sugar cane, given by precipitations optimal, a generous sun and a volcanic soil, combined with a deep-rooted environmental philosophy, can produce according to the methodology of the agricultural French Rum authentic, true expression of this wonderful land. The Rum of Saint Aubin are young, fragrant, typical and genuine, a faithful witness of the traditions of this people.
