The Sevillana Cask is an explosion of pleasant olfactory sensations. The aromas are intense and recall those of orange peel, aromas of hazelnut and dried fruit. To the taste we find a slight smoking and a velvety sensation in the palate, it is a blend of rums aged from 4 to 12 years distilled from sugar cane, coming 100% from the island of Negros. The first part of the aging takes place in American oak barrels, followed by a period of 3 years in two different types of Spanish barrels: Oloroso sherry barrels and Andalusian Vino De Naranja barrels. Distilled on the island of Negros from molasses of one of the best sugar cane in the world (the Noble), the rum Don Papa is then aged in American oak barrels for at least 7 years.
