Winery
The base wines of the Cuvée Prestige are the result of careful grape selection and expert vinification conducted in full compliance with the Ca' del Bosco Method. The grapes, hand-picked into small crates, are classified and chilled. Each bunch is selected by expert eyes and hands, then benefits from an exclusive "berry spa," a special grape washing and hydromassage system using three soaking tanks and a drying tunnel. After pressing in the absence of oxygen, all the musts for the base wines ferment in temperature-controlled steel tanks and remain there until the following March. Seven months of aging are therefore necessary for the wine to clarify, mature, and fully reveal the character of its original vineyards. The wines are then expertly blended in the "magic ritual" of creating the cuvée. Only after aging on the lees for at least two years can this Franciacorta express its full richness and identity. Disgorgement occurs in the absence of oxygen, using a unique system, designed and patented by Ca' del Bosco. This prevents oxidative stress and the addition of sulfites. This makes our Franciacortas purer, more enjoyable, and longer-lived. Finally, each bottle is uniquely marked to ensure traceability.
