Both on the nose and on the palate Tom Time Gin faithfully reflects the botanicals that compose it: rosemary and juniper are the masters with fresh and Mediterranean scents, accompanied by an intense balsamic aroma given by the other botanicals: spruce wood and cypress pine cone. The queen of the meadows, a rare spontaneous herb with particular floral scents, creates a perfect balance between the balsamic nature of the conifers and the Mediterranean imprint of rosemary. The finish is very long and leaves a pleasant freshness in the mouth that recalls the drink.

Description
Tom Time is a cold compound gin, in fact it is characterized by the coexistence of distilled botanicals and other cold macerated in alcohol. The choice to use this particular production style is the result of a long study of the recipe - which lasted over two years - to get the best out of every single botanical that makes up Tom Time Gin today. Our production process is designed to allow optimal conservation of the organoleptic properties of the ingredients, as well as of the more delicate and particular aromas, which are transferred by botanicals to gin; characters which, otherwise, would be compromised by the heat of distillation. It was therefore decided to distill only juniper and rosemary, to accentuate their finesse and aromatic charge. While we have chosen to cold macerate the spruce wood, the cypress pine cone and the queen of the meadows, to preserve their marked balsamiciness and intensify the gustative persistence. The final result is determined by the assembly of the spirits of each botanical, in a perfect sensorial balance.
